Stuffing Our Faces

Dropped my sister off at the station this morning- it’s been lovely having her staying and I feel like the age gap (8 years) is beginning to seem less of an issue, with us having more shared interests and things to talk about. Hopefully we can stay close as she continues to grow up and go off to University, and who-knows-what goes on in my life!

Food

We’ve been eating lots of great food over the past few days so I thought I’d share some of it with you! Food photography is also one of my favourite uses of my new camera… 🙂

Honey soy salmon salad

Honey soy ginger dressing is so easy to make and tastes amazing on salmon, chicken, pork, or drizzled over your salad! I generally make up the quantities, but for guidance here’s the recipe from BBC Good Food. I love the way the honey makes the sauce caramelise so you end up with awesome sticky globules of flavour, nom!

With mixed leaves and corn on the cob…

Followed by a Fab ice lolly- old school 🙂 I still have to eat all the chocolate and sugar strands off the outside first…

Then on Tuesday before the cinema we headed to Giraffe in Norwich for dinner.

They do Burger Tuesdays where you can choose any burger off their menu with skin-on fries (sweet potato fries £1 extra) for £5.95- not a bad deal! And these are proper burgers with heaps of tasty ingredients and many different options to choose from, not just your limp cheeseburger from some un-named fast food joint…

I opted for the falafel burger with grilled pepper, hummus, beetroot, halloumi and rocket. With sweet potato fries on the side. Ah-may-zing! I am a huge lover of sweet potato anyway and could have eaten this portion ten times over! The burger was really tasty too, although a little hard to eat without making a mess, but hey, we can’t be ladylike all the time.

I drank an iced superfruit teapigs tea in a jamjar- such a cool way to present it. I love Teapigs tea, they have so much more flavour than any other fruit or herbal tea I’ve tried due to the actual fruit pieces in their beautiful tea temples. I was excited to try one in a summery form and with some mint leaves it was lovely and refreshing.

Exercise
Tuesdays Miles
DISTANCE – 2.74k loop
TIME – 21:10mins
AVERAGE PACE – 7:44min/km

Ran the whole way! For me this is a big deal, as up to now I’ve had to stop and walk at least once, even if only for 20seconds. My time wasn’t any quicker becuase I had to slow down quite a lot in order to not need to walk at all, and I’m still experiencing calf pain on my right leg. I’m hoping to get a physio appointment at some point soon to get it checked out and see if there’s anything I can do.

Wednesdays Miles
Body Combat with my sister 🙂
TIME – 1hr
Treadmill
DISTANCE – 1.6k for the RW Summer Running Streak

Then we went and collapsed in the jacuzzi to unwind- bubbles!

Friday Miles
Elliptical
TIME – 30mins
DISTANCE – 1.6k for Running Streak. OK, technically I didn’t run it, but I’m trying to do some low impact exercise to see if my calves ache less.
Treadmill
DISTANCE – 1k treadmill- testing to see if I was still experiencing pain. It was actually a really good run, and I finished in about 7minutes which is pretty quick for me, but I didn’t push it seeing as my legs were feeling good.

More fun updates to come 🙂

Beki x
