For the Love of Eggs

Eggs are amazing – they’re one of the most nutritious foods you can buy and are a great source of high quality protein, healthy fats and Omega-3 as well as containing many other vitamins and minerals.
Whenever I don’t know what to cook, or need something quick and tasty I reach for this box of little golden treasures.
Nearly 90% of eggs are produced within the British Lion Eggs scheme which has effectively eradicated salmonella in British eggs since it’s introduction – the little trademark red lion stamped on the shell is a symbol of stringent standards covering the entire production chain. 

For so long people have been afraid of eating too many eggs because of fears regarding the cholesterol content, but experts now know that dietary cholesterol does not increase the risk of heart disease, and recommendations on limiting egg consumption have been relaxed. There’s no such things as too many eggs!
A medium egg contains around 70 calories and fits into a healthy, balanced diet whether you’re eating them for breakfast, lunch, dinner or even as a snack. Here are some of my favourite egg recipes that I love to incorporate into my day. 


Breakfast – Poached, boiled or scrambled 

Whether you use poach pods, a specific poaching pan or are simply adept at swirling the water with a fork, poached eggs are one of my favourite things to have for breakfast. Especially with a side of avocado or bacon! They have to have runny yolks though – in fact that goes for all my eggs, I’m not a fan of a solid yolk…

Boiled eggs with soldiers are a childhood favourite, and scrambled eggs with beans was a comforting meal I used to eat a lot when I was working offshore. It’s one of the only ways my sister will eat eggs too because she doesn’t like it when the white and yolk are separate- quirks!

Breakfast – Pancakes

Who doesn’t love a mountain of pancakes! Especially smothered in syrup and topped with berries and bacon, mmm… One of my secrets is to put a mashed banana into the pancake batter, to add in another of your 5-a-day and add great flavour to the dish. 

Lunch/Dinner- Quiche and Frittata

I love quiche – in fact I love anything with pastry, ssshh – but if you’re trying to feel a little healthier then a frittata or “crustless quiche” is a great option. This can actually be eaten for any meal of the day in my opinion, although it makes a brilliant quick dinner to rustle up in the evening when you’re short of time.
It’s such a versatile dish too as you can pretty much throw in any vegetables you happen to have- chopped or grated. Topped with plenty of cheese of course… The leftovers can then be eaten for breakfast the next day, or wrapped and taken for lunch. Talk about a multi-tasking little dish!
