Tropical Banana Cake with Urban Fruit

I love having healthy snacks to hand, whether that’s in my office desk drawer, my handbag/gymbag, in the kitchen cupboards or in the car. It makes it that much easier to make a healthy choice and not succumb to the chocolate and biscuits! Plus it stops me from getting super hungry and grumpy when I get peckish away from home!

When Urban Fruit sent me this amazing package I was so excited and have loved trying all the different fruits over the last couple of weeks, from strawberry and pineapple to cherry. I think my favourite has to be the mango though!
What’s great about Urban Fruit is that their products are simply delicious fruit, gently baked at low temperatures to preserve all the good stuff, but with no added sugar, oils, sulphites or other rubbish! Just 100% tasty fruit. 
They make handy 35g snack packs too (to stop you from eating the bigger packs all in one go, haha).

I decided to use the Tropical Fruit Mix to spice up my banana cake- it’s a staple recipe of mine, that I always turn to when I have a few old bananas. The extra pineapple, mango, banana and coconut of the Urban Fruit mix were a great addition!

Ingredients
100g butter
100g soft brown sugar
2 eggs
2 mashed bananas
225g SR flour
2tbsp milk
1 packet Urban Fruit Tropical Mix

Method
The method is super easy – just mix all the ingredients together, pour into a 1kg/2lb loaf tin, and cook at 180degrees (160degrees fan oven) for 50minutes.
