Coconut Protein Pancakes

aka Drop Scones or American Style Pancakes

If you’re anything like me, you get to the weekend and start craving pancakes. But is it really possible to have a little breakfast treat that won’t leave you ridden with sugary nutella laden guilt? Of course it is! This simple recipe is quick, easy, fuss free and highly enjoyable whilst basking in the late morning sunshine.

(Serves 1)
15g coconut flour
15g protein powder
1 large egg
1/4 tsp baking powder
50ml milk (almond for a little extra natural sweetness)
75g pineapple cottage cheese
Handful of berries

GF option: You can buy gluten free baking powder from speciality food shops.

  1. Heat a large pan on a medium heat. I tend to spritz some 1 cal spray in my pan but you can use any oil of choice here. 
  2. Mix all the ingredients together until you’ve got a smooth, fairly thick but spoonable mixture. Gently spoon 3 large dollops of your mix into the pan and spread into circles. When you start to see bubbles on the surface they’re ready to flip. Fry for just another couple of minutes on the other side. 
  3. You’re now ready to build your pancake tower. Layer the pancakes with a bit of cottage cheese in between each and on top, then finish off with your berries. 
  4. Breakfast is served in about 10 minutes from start to finish! Fluffy, fresh and delicious just like a pancake should be.
