Random Recipe: Prawn and Chorizo Quinoa

Prawn and chorizo quinoa
This is my twist on a prawn and chorizo rice recipe from the BBC Good Food 101 One Pot Dishes book. As such the quantities are a little vague, as I made them up as I went along! I’ve tried to be as accurate as possible in the ingredients list below, but feel free to amend to your desired tastes 🙂

Ingredients
1 chopped onion
1 garlic clove
100g (?) chorizo- normally I’d use chorizo chunks but I happened to have sliced in the fridge so I used that which seemed to work well!
A handful of chopped cherry tomatoes
1 pack (250g?) prawns
1 cup of quinoa
150g frozen peas
1 glass of white wine

1. Chop and prep all your ingredients

2. Rinse the quinoa thoroughly under cold water to get rid of the saponins (naturally occurring plant chemicals that can make it taste bitter otherwise).

3. Stir fry your onion, garlic and chorizo for a couple of minutes.

4. Then add the quinoa and one glass of wine- pour yourself one as well while you’re at it! 🙂

Bubble this on a high heat to cook off the wine and then add enough water to cook your quantity of quinoa- the ratio is 2 cups water to 1 cup quinoa.

5. Leave for 15mins (approximately) until the quinoa is cooked al dente and fluffy, then add your frozen peas and leave until cooked.

6. Finally add in your cherry tomatoes and prawns (I was using cooked prawns so wanted to add them right at the end so they didn’t become overcooked and rubbery).

7. Season and then serve with fresh parsley- enjoy! 🙂
