Thursday’s run was really nice.

It was actually sunny for a short while Thurs lunchtime so I decided to make the most of it and go for a run- it literally started to chuck it down just as I got back to work, perfect timing!

He’s working away for 2months, and while I’m excited that I’m going to get to go out and join him for a holiday at the end of the job it still sucks a bit now.


It’s his birthday next week so I got him a few presents before he left…

…we can celebrate with cocktails on the beach when we next see each other! 🙂

I decided to do some cooking once he’d left to keep myself busy, so I don’t just mope on the sofa with chocolate and wine (maybe later :-p).

1. Stewed Apples

Chop lots of apples into chunks, add brown sugar, cinnamon and a splash of water to stop it sticking.

Cook until soft and mushy! Can be used to make crumble, or add to yoghurt, ice cream, porridge etc. I might also make some apple flapjacks with it…

2. Banana cake

This is one my easiest go-to bakes for when I want some cake or have some over-ripe bananas to use up!

Recipe:

100g butter
140g light brown soft sugar
2 eggs
2/3 ripe bananas
2 tbsp milk
225g SR flour
(optional- add walnuts, choc chips…)

Mix all ingredients together and cook for 45-50mins at 180 degrees Celsius in a 1kg loaf tin (or you can divide into muffin cases and decorate with Nutella, yum!)


3. Roasted vegetable couscous

And finally…my dinner!


Chop half a sweet potato and a pepper. Place on a baking tray with a few cherry tomatoes, drizzle with olive oil and season with rosemary and salt and pepper.

Roast for 40minutes. Cover 50g couscous with boiling water, stir and leave for 5mins. Microwave some frozen peas. Drizzle the couscous with olive oil and lemon juice and stir in the peas.

Then top with the roasted vegetables and enjoy!

Off now to chill in front of the TV with a cup of tea 🙂

PS. Mark just phoned to say he had Yo Sushi for dinner in the airport- it’s not just me who is obsessed with it! We discovered this Australian sushi restaurant chain called Sushi Train online- awesome name! I can’t wait to try it out.
